Anyone ever see a Nigiri rice forming machine? Saw one for the first time at Temaki Den in Denver.

    This was taken at one of Denver’s best sushi restaurants, Temaki Den, owned by same people who run Denver’s other best sushi restaurant Sushi Den. I was surprised to see it there, and in such dirty shape.

    They have them at the whole foods sushi stall in my area. This one in particular looks filthy.

    If I ever see one of these sitting in a legit sushi spot I’m turning around and walking out.

    For gas station, grocery store, premade sushi… well, fine I guess.

    Looked into it a bit. That’s a $18k top of the line nigiri sushi machine. They say it can roll-up to 4,800 of these per hour without damagjng the rice grains. It also keeps the rice at a food safe temp with a built in heater.

    This place must be doing good to afford one of those.

    Hard to find reviews but I couldn’t find anything about the quality being poor. Sure wish something that expensive *looked* a little nicer though. The outer material looks like a dirt magnet.

    I prefer the machine that puts the perfect amount of rice on the nori sheets. When you are making hundreds of rolls a day it is nice to have. I solo prep for large catering station orders. Never seen the nigiri one but I’ve definitely large batch prepped nigiri rice turds for use later (fish added fresh cut). My favorite to prep are the pressed sushi rice molds tho, just load them up and stack them. Spam musubi is my favorite to complete bulk prep tho. sorry got off topic. Cool their volume is so high they can justify this machine.

    Yes! When I worked at Kura Sushi in Japan, this is the machine they use. If you go to any Kura Sushi in Japan (maybe even outside) it is made from this machine.

    One of the 100yen a plate ($1 at the time) sushi places I used to frequent in Japan used one similar to that. That carousel was always stocked!

    Yes. All the Sugarfish in LA use them and obviously Kura uses them.

  16. Wegmans uses these machines for pre-laying a sheet for Maki.

    Always heavier on the rice than I’d prefer, but it is a huge time saver and *consistent*.
